Auricchio is produced only from whole cows milk, which is heated to 37° C, at which point the "special rennet" is added. The rennet helps the cheese thicken so that it can be worked by hand into the salami or mandarin or conic shapes that consumers know so well. The cheese is also soaked in a water and salt solution, which helps give it its distinctive flavor.
